  • 3 medium sweet potatoes
  • 1 paper cup (approx. 150g) dry glutinous rice flour
  • 1 Tbsp agave syrup
  • A little milk
  • 15-20g butter
  • Mozzarella cheese, to taste

First, wash the sweet potatoes thoroughly and place them in a steamer. Steam for about 20-30 minutes until tender and moist. Adjust the cooking time to ensure the sweet potatoes are fully cooked.

While still warm, carefully peel the skin off the steamed sweet potatoes and place them in a large bowl.

Using a fork, mash the sweet potatoes until smooth and lump-free. For a creamy texture, mashing them thoroughly is recommended.

To the mashed sweet potatoes, add 1 tablespoon of agave syrup for sweetness and 1 paper cup of dry glutinous rice flour for a chewy texture. Gradually add a little milk while kneading the dough well until it reaches a good consistency, not too stiff.

Adjust the dough consistency by adding more glutinous rice flour if it’s too sticky, or a little more milk if it’s too dry. The dough shouldn’t stick excessively to your hands. Proper consistency is key to prevent tearing and ensure a pleasant chew.

Wearing disposable gloves, take a portion of the dough and roll it into a ball. Gently flatten it with your palm to create a well in the center, and then fill it generously with mozzarella cheese.

Heat a non-stick pan over medium-low heat and add about 15-20g of butter. Once the butter is melted, reduce the heat to low to prevent burning.

Place the shaped hotteok onto the pan. Using a spatula, gently press down on the hotteok while cooking, flipping it to ensure both sides are golden brown. Be careful not to press too hard, which might cause the cheese to burst out.
