Main Ingredients

  • 1 medium sweet potato
  • 1 cup mozzarella cheese (about 100g)
  • 50ml water (for microwave)

Dough & Seasoning

  • 1 Tbsp sugar
  • 1/3 Tbsp salt
  • 1 Tbsp glutinous rice flour

Cooking Instructions

Step 1

First, thoroughly wash the sweet potato, peel it, and dice it into roughly 1-1.5cm cubes. Place the diced sweet potato into a resealable bag or a microwave-safe container. This makes mashing easier later and ensures even cooking.

Step 1

Step 2

Add 50ml of water to the bag or container with the sweet potato. This water will help keep the sweet potato moist during steaming and prevent it from drying out in the microwave. Now, microwave on high for 6 minutes. (Adjust the cooking time based on the size of the sweet potato and your microwave’s power.)

Step 2

Step 3

Be careful, as the sweet potato will be very hot when removed from the microwave! Use a fork or a masher to mash the sweet potato until it’s smooth and lump-free. Mashing while it’s still warm makes the process much easier. Add 1 Tbsp of sugar and 1/3 Tbsp of salt to the mashed sweet potato and mix well to season. This will enhance the natural sweetness of the potato.

Step 3

Step 4

Now, add 1 Tbsp of glutinous rice flour, which will give the pancake a chewy texture, and mix it thoroughly with the mashed sweet potato. Incorporating glutinous rice flour will result in a more chewy and delicious pancake when cooked. The mixture will become slightly sticky.

Step 4

Step 5

Take a portion of the sweet potato mixture and flatten it into a round shape in your palm. Make a slight indentation in the center and generously fill it with 1 cup of mozzarella cheese. Carefully pinch the edges together to seal the cheese inside, ensuring it doesn’t leak out. A tip for even cooking is to flatten the dough thinly around the cheese filling.

Step 5

Step 6

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Carefully place the prepared sweet potato cheese pancake into the hot pan. Cook slowly over medium-low heat. Cooking on high heat can burn the outside while leaving the inside uncooked, so be mindful of the temperature.

Step 6

Step 7

Once one side is golden brown, flip the pancake and cook the other side until it’s also golden brown. The cheese will melt and meld beautifully with the sweet potato, creating an appetizing color. When both sides are golden brown and the cheese is fully melted, your delicious sweet potato cheese pancake is ready! Enjoy it immediately while it’s warm for the best taste.
