Step 1
First, thoroughly wash and peel the sweet potatoes. Steam them for about 20-25 minutes until very tender when pierced with a fork. While still hot, transfer the steamed sweet potatoes to a bowl and mash them smoothly using a fork or potato masher. Mix in a pinch of salt and dried parsley for flavor. This forms the base of your sweet potato croquettes.
Step 2
Prepare the components for the breading station. Set up three shallow dishes: one with flour, one with lightly beaten eggs (add a splash of cooking wine if you’re concerned about an eggy smell), and one generously filled with breadcrumbs.
