Main Ingredients
  • 1 whole chicken (cut into pieces for stew)
  • 1 onion (cut into large chunks)
  • 3 Cheongyang chili peppers (stems removed, left whole)
  • 1 large green onion (cut into large pieces)
  • 2 sweet potatoes (peeled and cut into large chunks)

Golden Seasoning Sauce
  • 5 Tbsp Gochujang (Korean chili paste)
  • 10 Tbsp Jin Ganjang (Korean soy sauce)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 4 Tbsp sugar
  • 3 Tbsp oligosaccharide syrup

Cooking Instructions

Step 1

First, prepare the vegetables and sweet potatoes for the Dak-bokkeum-tang. Cut the onion into large chunks, and prepare the Cheongyang chili peppers by removing their stems, leaving them whole. Cut the green onion into large pieces as well. For the sweet potatoes, peel them completely and then cut them into pieces that are suitable for a stew.

Step 2

Slice the prepared vegetables and sweet potatoes into bite-sized pieces and set them aside. This pre-cutting step will make the cooking process much smoother.

Step 3

Rinse the chicken pieces thoroughly under running cold water to remove any impurities. This is a crucial step to reduce any gamey odor from the chicken.

Step 4

Blanch the prepared chicken by placing it in boiling water for about 2-3 minutes. This process helps to remove any remaining impurities and excess fat, resulting in a cleaner broth. After blanching, drain the chicken and rinse it once more under running water.

Step 5

Now, let’s start cooking the Dak-bokkeum-tang. Place the rinsed chicken in a pot. Add enough water to almost cover the chicken pieces (approximately 500-600 ml).

Step 6

To the water with the chicken, add all the ingredients for the golden seasoning sauce: 5 Tbsp Gochujang, 10 Tbsp Jin Ganjang, 3 Tbsp Gochugaru, 1 Tbsp minced garlic, 4 Tbsp sugar, and 3 Tbsp oligosaccharide syrup. Stir well to ensure the seasoning is evenly distributed throughout the chicken.

Step 7

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes. When the broth starts to bubble vigorously, add the whole Cheongyang chili peppers you prepared earlier. Simmering them whole will add a pleasant spicy kick.

Step 8

Once the chicken is partially cooked and the sauce has thickened slightly, add the pre-cut onion, green onion, and the large chunks of sweet potato. Be careful when adding the sweet potatoes to prevent them from breaking apart.

Step 9

Continue to simmer everything together. You can remove the lid and cook over medium-low heat for another 10-15 minutes, or until the sauce reaches your desired consistency. Stir occasionally to prevent the chicken, vegetables, and sweet potatoes from sticking to the bottom of the pot. Your delicious Dak-bokkeum-tang, with the flavors well-infused, is now ready!
