Sweet Potato Pork Stir-fry with Thinly Sliced Pork Belly

Main Ingredients

  • 450g thinly sliced pork belly
  • 1 medium sweet potato
  • 1 stalk of green onion
  • 2 Korean green chilies (Cheongyang peppers)
  • 2g minced fresh ginger (or a pinch of ginger powder)
  • A little cooking oil
  • A little toasted sesame seeds (for garnish)

Sauce

  • 2.5 Tbsp soy sauce
  • 2 Tbsp cooking wine (like Mirin or Cheongju)
  • 1 Tbsp minced garlic
  • 1 Tbsp brown sugar
  • 1.5 Tbsp corn syrup (or rice syrup)
  • 0.5 Tbsp sesame oil
  • A pinch of black pepper

Prepare all your ingredients before you begin cooking. Fresh ingredients are the key to a delicious meal!

Wash the green onion and slice it diagonally into bite-sized pieces, keeping both the white and green parts. Remove the stems and seeds from the Korean green chilies, then slice them diagonally as well. Adjust the number of chilies to your preference for spice.

Wash the sweet potato thoroughly. Cut it into bite-sized pieces, about 1.5-2 cm thick. Leaving the skin on can add extra nutrients and flavor.

Heat a little cooking oil in a pan over medium heat. Add the cut sweet potato and cook, flipping occasionally, until lightly golden and slightly tender. They don’t need to be fully cooked at this stage. Transfer the par-cooked sweet potato to a separate bowl.

Let’s make the bulgogi sauce. In a bowl, combine 2.5 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp minced garlic, 1 Tbsp brown sugar, 1.5 Tbsp corn syrup, 0.5 Tbsp sesame oil, and a pinch of black pepper. Stir until the brown sugar is completely dissolved. Add the thinly sliced pork belly to the sauce and mix well with your hands, ensuring each piece is coated. Let it marinate for at least 10 minutes for the flavors to meld.

Now, heat about 1 Tbsp of cooking oil in a stir-fry pan over medium-low heat. Add the minced ginger and sauté until fragrant. Once the ginger aroma is released, increase the heat to medium-high and add the marinated pork belly. Stir-fry for about 3 minutes until the pork is mostly cooked. Then, add the par-cooked sweet potato to the pan.

Since the sweet potato is already partially cooked, stir-fry everything together over medium-high heat for just about 30 seconds, allowing the flavors to combine. Be careful not to overcook, as the sweet potato might become mushy.

Finally, add the diagonally sliced green chilies and green onions to the pan. Toss them lightly to combine with the pork and sweet potato.
