Main Ingredients

  • 4 slices Black Rice Bread
  • 2 medium Sweet Potatoes
  • 1/2 Cucumber
  • 1/4 Onion
  • 40g Bacon (about 2 strips)

Seasoning & Sauce

  • 2 Tbsp Whipped Cream (or plain yogurt)
  • 4 Tbsp Mayonnaise
  • Honey Mustard (to taste)

Cooking Instructions

First, wash the sweet potatoes thoroughly. Cut them in half (leaving the skin on) and place them in a microwave-safe container. Cover with plastic wrap or a lid and microwave for about 5 minutes, or until soft. You can test for doneness by piercing with a fork; it should go in easily.

Wash the cucumber well with coarse salt. Using a peeler, create ribbons by peeling the skin in strips. Then, finely julienne the cucumber. Finely julienne the onion and chop the bacon into small pieces as well.

While the julienned cucumber and onion will be used raw, it’s time to cook the bacon. Place the chopped bacon in a dry skillet over medium heat and cook until golden brown and crispy. Drain excess grease with a paper towel to prevent the sandwich from being too oily.

Once the sweet potatoes have cooled slightly, peel them and mash them thoroughly with a fork or a potato masher until smooth. In a bowl, combine the mashed sweet potato, cooked bacon, julienned cucumber, and julienned onion. Add the whipped cream and mayonnaise, then mix everything together gently until well combined to create the sandwich filling. Taste and adjust seasoning if needed.

Trim the crusts off the black rice bread slices. Spread a thin layer of honey mustard on one side of each bread slice. Generously spoon the sweet potato filling onto one slice of bread, then top with the other slice.
