Received an abundance of sweet potatoes from your parents’ home and enjoying them almost daily for breakfast or as a snack? Today, we’re sharing how to make a delightful creamy soup and crispy croutons using those very sweet potatoes. Even without fancy ingredients, you can create a restaurant-quality dish at home. The natural sweetness of the sweet potatoes, the richness of the cheese, and the crunch of the croutons create a universally loved flavor combination.
Soup Ingredients- 2 medium sweet potatoes
- 400ml milk
- 1 slice cheddar cheese
- 1/2 onion
- 20g butter (2 slices)
- A pinch of salt (approx. 2 pinches)
Cooking Instructions
Step 1
First, prepare the sweet potatoes. Wash the sweet potatoes thoroughly, then steam them in a steamer for 20-30 minutes, or microwave them for about 5-7 minutes until tender. Once cooked, let them cool slightly, peel, and cut into large chunks.

Now, let’s make the crispy croutons to accompany the soup. Cut the bread into small cubes, about 1.5 cm in size. If they are too small, they might crumble easily, so aim for a moderate size.

Next, we’ll sauté the onion to add depth of flavor to the soup. Finely slice half an onion. Heat 1 Tbsp olive oil and 10g of butter in a pot over medium-low heat. Sauté the onions until they become translucent and develop a light brown color. Sautéing them well will significantly enhance the sweetness and flavor.

Once the onions are nicely sautéed, add the chopped sweet potatoes and 400ml of milk to the pot. Cook until the sweet potatoes are submerged and tender in the milk.

When all ingredients are cooked, blend them until smooth using a blender or immersion blender. Ensure the soup is velvety and lump-free. Season with two pinches of salt. It’s best to taste and adjust seasoning as you go, rather than adding too much salt at once.
