Sweet Potato Vine Kimchi (Gogumasun Kimchi) – Freshly Harvested
Spicy and Refreshing Sweet Potato Vine Kimchi, made with healthy, home-grown organic ingredients!
This is a healthy and delicious kimchi made with organic sweet potato vines harvested directly from my own garden. It’s seasoned with freshly picked vegetables, offering a delightful crisp texture and a perfect balance of spicy and sweet flavors. The preparation is simple, making it easy for anyone to make.
Main Ingredients- 500g fresh sweet potato vines
- 100g chives
- 1/5 carrot
- 2 small onions
Seasoning Ingredients- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp plum extract (or syrup)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp plum extract (or syrup)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp sugar
Cooking Instructions
Step 1
First, wash the sweet potato vines thoroughly. Bring a pot of water to a rolling boil and blanch the vines for about 3 minutes on high heat. It’s important not to overcook them as they can become mushy. Immediately drain them into a colander and rinse under cold running water to cool. Once cooled, the skins will peel off much more easily, making them easier to prepare.
Step 2
While the sweet potato vines are blanching, prepare the other vegetables. Chop the chives into bite-sized pieces. Thinly julienne the carrot and thinly slice the onions. Having these vegetables ready will allow you to mix everything together right after preparing the sweet potato vines.
Step 3
After peeling the cooled sweet potato vines, cut them into manageable lengths, about 5-7 cm long. Place the cut vines into a large mixing bowl along with the prepared chives, julienned carrots, and sliced onions.
Step 4
Now, add all the seasoning ingredients (minced garlic, sesame seeds, gochugaru, plum extract, fish sauce, and sugar) to the bowl. Gently mix everything together, ensuring the seasoning is evenly distributed among the sweet potato vines and vegetables. If you plan to eat it right away, a drizzle of sesame oil will add a wonderful nutty aroma and enhance the flavor.
