How to Make Pumpkin and Chestnut Brown Rice for a Healthy Diet

Main Ingredients- 1 cup glutinous brown rice
- 5 chestnuts
- 1/4 pumpkin
- 1 1/2 cups water
- Pinch of salt

Step 1
Prepare the pumpkin first. Wash it thoroughly and pat it dry. Place it in a microwave-safe dish, cover with plastic wrap, and microwave on high for 3 minutes. Flip the pumpkin and microwave for another 3 minutes. This will soften it slightly, making it easier to cut. Once slightly cooked, cut the pumpkin into 4 wedges.
Step 2
Scoop out the seeds from the pumpkin wedges and peel them. You can leave the skin on if you prefer, but peeling will result in a softer texture. Cut the peeled pumpkin into bite-sized cubes, about 1.5 cm thick, ensuring they won’t break down too much during cooking. Peel the chestnuts and set them aside. Using pre-peeled chestnuts will save you time.
Step 3
Rinse the glutinous brown rice gently under cold running water 2-3 times, or until the water runs clear. Be careful not to mash the grains. Drain the rice well and place it into a pressure cooker.
Step 4
Arrange the cubed pumpkin and peeled chestnuts evenly over the rinsed glutinous brown rice in the pressure cooker. Pour in 1 1/2 cups of water (about 270ml). You can adjust the water slightly based on the type of rice and your preference for texture.
Step 5
Season the rice with a pinch of salt before cooking. This enhances the natural sweetness of the ingredients. You can also add about 1/2 teaspoon of soy sauce for a deeper flavor. This step is optional; you can also season the rice after cooking with soy sauce or other condiments.
Step 6
Cook the rice. Close the lid of the pressure cooker and bring it to a boil over medium-high heat. Once the pressure valve starts to whistle, reduce the heat to low and let it simmer for 20-25 minutes. After cooking, turn off the heat and let the rice steam for another 10 minutes. Steaming allows the rice to become perfectly fluffy and moist.
Step 7
Once the steaming is complete, open the pressure cooker lid. Gently fluff the rice with a spatula, being careful not to break the pieces of pumpkin and chestnut. Serve the delicious sweet pumpkin and chestnut brown rice in a bowl for a visually appealing and incredibly healthy meal!
