Sweet Pumpkin Curry
A Healthy and Delicious Meal for Kids: Sweet Pumpkin Curry!
Pumpkins are wonderfully sweet and flavorful right now, aren’t they? Pumpkin is not only great for growing children but also for adults. That’s why I decided to make a healthy curry with pumpkin! This recipe offers a delightful way to incorporate this nutritious ingredient into your family’s diet.
Main Ingredients- 1/2 medium pumpkin
- 1 and 1/2 medium onions
- 2/3 medium carrot
- 150g pork for curry (loin or tenderloin recommended)
- 1 Tbsp cooking oil
- 4 cups water (800ml)
Seasoning- 1 packet curry powder (100g)
- 1 Tbsp minced garlic
- Pinch of salt (optional)

Cooking Instructions
Step 1
Cut the pumpkin in half, scoop out the seeds, and rinse it thoroughly under running water. Prepare 1 and 1/2 medium onions. You’ll need about 2/3 of a medium carrot. If using pork tenderloin for curry, place it on paper towels to lightly remove any excess blood. Dice the prepared pumpkin, onion, and carrot into roughly 1.5cm cubes for even cooking and presentation.
Step 2
Heat 1 Tbsp of cooking oil and 1 Tbsp of minced garlic in a wide pan over medium heat until fragrant. Add the pork and stir-fry until it turns white on the surface. Then, add the diced pumpkin, onion, and carrot. Sprinkle a pinch of salt (about the size of a pea) and sauté for 1-2 minutes to enhance the flavors. Pour in 4 cups (800ml) of water and bring to a boil over high heat. Once boiling, let it simmer for about 2 minutes until the pumpkin is slightly tender. Stir in the curry powder, ensuring it dissolves completely without lumps. Reduce the heat to medium and cook for about 1 minute, stirring continuously to prevent sticking, until the curry thickens to your desired consistency. Your delicious pumpkin curry is ready!

The sweet and delicious pumpkin curry is ready to be enjoyed! I made curry after a while, and my son ate it up so well. Sometimes children aren’t keen on eating pumpkin by itself, but incorporating it into dishes like curry is a fantastic way for them to get their nutrients. Serve it hot over rice for a delightful and healthy meal!
