9-Month-Old Baby Side Dish: How to Make No-Salt Fruit Water Kimchi
Introducing a refreshing and delicious fruit water kimchi that even babies with no teeth or difficulty chewing can enjoy! This recipe is packed with sweetness and a pleasant crunch that will delight your baby’s palate, making it a healthy and tasty treat.

- 5g Garlic (approx. 1 clove)

Cooking Instructions
Step 1
First, let’s make the sweet rice paste. In a pot, combine the dry sweet rice flour and 100g of water. Whisk well over low heat until there are no lumps. As it heats up, the rice will break down and thicken into a paste. Continue stirring and cooking for about 1 minute after it starts to boil, then turn off the heat and let it cool completely.
Step 2
Prepare the vegetables and fruits for the water kimchi broth. Peel or thoroughly wash the radish, pear, apple, and onion, then cut them into manageable pieces for blending. Also, peel and prepare the garlic and ginger.
Step 3
Place the prepared radish, pear, apple, onion, garlic, and ginger into a blender. Add 100g of water and blend until you achieve a smooth puree.
Step 4
Now, let’s make the water kimchi broth. In a large bowl, combine 360g of purified water and 220g of apple juice. Stir well until they are thoroughly mixed.
Step 5
Pour the smooth puree from the blender into a fine-mesh sieve or cheesecloth placed over the broth bowl from step 3. Squeeze and knead the mixture to extract as much liquid as possible. Only the clear liquid should be used.
Step 6
To the clear strained liquid, add 60g of the prepared sweet rice paste. If you’d like to add color, stir in 2-3 teaspoons of paprika powder and mix well. Transfer the finished water kimchi broth to an airtight container and let it ferment at room temperature for 24-36 hours. During this time, beneficial bacteria will develop, creating a pleasant tang. After fermentation, store it in the refrigerator.
Step 7
If you’ve made a large batch of water kimchi broth and don’t anticipate using it all within a week, it’s recommended to portion it out for freezing. Place individual servings into ice cube trays or small containers. Frozen cubes can be thawed and used when needed, ensuring you always have delicious water kimchi on hand.
Step 8
We’ll now make the fruit water kimchi using fruits your baby loves. I’ve prepared cherry tomatoes, yellow peaches, and melon, which are favorites for many babies. Feel free to substitute with other fruits your baby enjoys, such as strawberries, apricots, or kiwis. For cherry tomatoes, it’s best to blanch them and remove the skins, as they can be difficult for babies to eat.
Step 9
Cut the prepared fruits into bite-sized pieces that are easy for your baby to handle. Avoid making them too small, as they might get mushy; aim for a size that your baby can chew comfortably.
Step 10
Finally, simply add the cut fruits to the fermented water kimchi broth. Your delicious fruit water kimchi is ready! Serve this cool and sweet treat to your baby for a delightful mealtime experience.
