Sterilize the glass jar you’ll use for the watermelon syrup. Pour boiling water into the jar, ensuring it covers the opening, and let it sit for a few minutes. This helps preserve the syrup. Turn the jar upside down to drain completely and let it air dry.

Cut the watermelon into manageable pieces. You’ll only be using the red flesh, so discard the rind.

Chop the watermelon flesh into approximately 1.5 to 2 cm cubes. Carefully remove any visible seeds with a knife or spoon; this will make the syrup and ade much more enjoyable to consume.

Using a kitchen scale, measure out exactly 550g of the seedless red watermelon flesh. Accurate measurement is key to achieving the perfect flavor balance in your syrup.

In a large bowl, combine the prepared watermelon cubes and sugar. Gently mix until the sugar is evenly distributed over the watermelon. Let it sit for about 15-20 minutes, or until the sugar begins to dissolve. Then, carefully pack the mixture into the sterilized jar, pressing down gently. Fill the jar to about 80% capacity. Pour any remaining sugar from the bowl into the jar.
