Tteokbokki Ingredients

  • 500g sweet rice cakes (kkul-tteok)
  • 15 boiled quail eggs
  • 90g sausage
  • 60g mozzarella cheese
  • 4 sheets of square fish cakes
  • 1/2 stalk of green onion
  • 400ml water
  • 1 broth cube (or stock)

Seasoning Mix

  • 1.5 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp soy sauce

Cooking Instructions

Step 1

To create a deep, rich flavor base, I dissolved 1 broth cube in 400ml of water. Once the water was simmering, I added the gochujang, soy sauce, sugar, and corn syrup. Stir well to ensure the seasonings dissolve completely without any clumps. Let this mixture come to a simmer.

Step 1

Step 2

While the sauce is simmering, let’s prepare the other ingredients. Cut the square fish cakes into bite-sized pieces. You can roughly chop them into 3-4cm squares, or cut them smaller or larger according to your preference. Slice the green onion diagonally or into larger chunks. Once these are prepped, you’re most of the way done with making the tteokbokki!

Step 2

Step 3

Once the seasoning base begins to bubble, add the sweet rice cakes, boiled quail eggs, sliced sausage, and fish cakes to the pot. The sweet rice cakes offer a delightful chewiness and a subtle sweetness that makes this tteokbokki unique. Stir everything gently to coat all the ingredients with the simmering sauce.

Step 3

Step 4

Now, let everything simmer together to meld the flavors. Cooking time can vary slightly depending on your heat, but simmering over high heat for about 3 minutes should be enough to soften the rice cakes and allow the sauce to thicken beautifully. Be sure to stir occasionally to prevent sticking.

Step 4

Step 5

As the tteokbokki nears completion, prepare the mozzarella cheese for that irresistible cheesy finish. Microwave the cheese for about 30 seconds to 1 minute until it’s soft and slightly melted. Spoon the warm, melted mozzarella cheese generously over the hot tteokbokki. Then, marvel at the stretchy cheese and enjoy your delicious Lee Gook-joo’s Sweet Rice Cake Tteokbokki!
