Making Sweet Rice Porridge with Brown Glutinous Rice in an Electric Rice Cooker
As someone who loves rice cakes, I’ve been trying to reduce my carbohydrate intake. I successfully made this Yakbap using brown glutinous rice instead of regular glutinous rice! It’s perfect for making a batch, portioning it out, storing it in the freezer, and then enjoying one portion at a time. It’s a healthy and delicious treat!
Ingredients- 1 cup glutinous rice (or 4 cups brown glutinous rice only)
- 3 cups brown glutinous rice (omit if using 4 cups regular glutinous rice)
- 2.5 cups water
- 0.5 cup brown sugar (adjust to taste, up to 1 cup)
- 3 Tbsp soy sauce
- 0.5 Tbsp ground cinnamon
- 0.5 Tbsp salt
- 1 Tbsp sesame oil
- Assorted nuts (almonds, walnuts, pine nuts, hemp seeds, white kidney beans, raisins, etc.) as needed
Cooking Instructions
Step 1
Rinse the glutinous rice and brown glutinous rice thoroughly under running water. Add plenty of water and soak for about 1 hour. This soaking process softens the rice, improving the texture of the Yakbap.
Step 2
Drain the soaked rice well using a sieve. It’s important to remove as much water as possible, as excess moisture can make the Yakbap mushy.
Step 3
In a small pot, combine 2.5 cups of water, brown sugar, soy sauce, ground cinnamon, and salt. Heat over medium heat, stirring just until the brown sugar has completely dissolved. There’s no need to boil it for an extended period.
Step 4
For the nuts in the Yakbap, roughly chop the walnuts and almonds into your preferred size. Avoid chopping them too finely, as some texture is desirable.
Step 5
Prepare all the assorted nuts you’ll be using, such as raisins, pine nuts, hemp seeds, and white kidney beans. Note that raisins can become quite hard when the Yakbap is chilled, so it’s best to add them towards the end.
Step 6
Place the drained rice into the inner pot of your electric rice cooker. Sprinkle the chopped walnuts and almonds evenly over the rice. Prepare to mix the rice and nuts.
Step 7
Pour the prepared seasoning mixture (which has cooled slightly) evenly over the rice. Ensure the seasoning is well distributed throughout the rice.
Step 8
Select the ‘Mixed Grains’ or ‘Brown Rice’ setting on your electric pressure cooker and start the cooking cycle. This setting is generally better suited for making Yakbap than the standard white rice mode.
Step 9
Once the cooking cycle is complete, open the rice cooker. Add the raisins, pine nuts, hemp seeds, and other finishing ingredients, along with 1 Tbsp of sesame oil. Gently mix everything together with a spatula, being careful not to mash the Yakbap. The sesame oil adds a wonderful nutty aroma.
Step 10
Line your desired mold (e.g., a square pan) with plastic wrap. Firmly press the cooked Yakbap into the mold, creating an even layer. Allow the Yakbap to cool completely at room temperature for about 1 hour. This resting period helps it set and firm up.
Step 11
Once the Yakbap has completely cooled and solidified, carefully lift it out of the mold using the plastic wrap. Separate it from the container and slice it into your preferred serving sizes. Enjoy your delicious and healthy homemade Yakbap! It can also be stored in the freezer and reheated for a tasty treat.
