Main Ingredients- 1 medium Zucchini
- 2 large Eggs

- 1 Red Chili Pepper

First, slice the zucchini into approximately 0.5 cm thick rounds or half-moons. Sprinkle a pinch of salt over the sliced zucchini and let it sit for about 30 minutes. This process, called ‘seasoning’, draws out excess moisture, preventing the pancakes from becoming soggy and enhancing their flavor.

Crack the 2 large eggs into a bowl. For a smoother texture and more even cooking, strain the eggs through a fine-mesh sieve. This step ensures the batter is lump-free and the pancakes have a beautiful, uniform color. (If you’re short on time, you can skip the sieving step).
