Sweet & Savory Soy Glaze- 2 Tbsp soy sauce

- 2 Tbsp sugar
- 2 Tbsp cooking wine (mirin or similar)
- Dash of black pepper
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
Begin by lightly rinsing the boneless chicken thighs under cool running water. This helps to remove any surface impurities.
Step 2
Pat the chicken thighs thoroughly dry with paper towels. This step is crucial for achieving a nice sear and allowing the sauce to adhere well. Next, season the chicken lightly with salt and pepper. For an even better flavor, let it marinate for about 30 minutes.
Step 3
Wash the green onion and then slice it diagonally into approximately 1cm thick pieces. This preparation will infuse the dish with a wonderful aroma and flavor as it cooks.
Step 4
Now, let’s prepare the irresistible soy glaze. In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of sugar, and 2 tablespoons of cooking wine. Add a dash of black pepper and 1 tablespoon of minced garlic. Whisk everything together until well combined.
Step 5
Heat a frying pan over medium heat. Place the chicken thighs in the pan, skin-side down. Sear the chicken until the skin is golden brown and nicely rendered. Cooking the skin first adds a delicious crispiness and rich flavor.
Step 6
Once the skin is beautifully browned, flip the chicken thighs and cook the other side until almost cooked through. Then, cut the chicken into bite-sized pieces. Since it’s boneless, this is very easy! Continue to cook the pieces until they are fully cooked.
Step 7
In a separate pan, or after briefly removing the chicken, add a small amount of cooking oil. Sauté the sliced green onions until fragrant – this step creates a wonderful ‘green onion oil’ base. Then, add the cut chicken pieces back into the pan and stir-fry them with the onions.
Step 8
Pour the prepared soy glaze over the chicken and green onions. Stir continuously to ensure the sauce doesn’t burn and coats the ingredients evenly. Continue to cook until the sauce thickens and glazes the chicken beautifully. Your delicious sweet and savory chicken thigh stir-fry is ready to be served! Enjoy it with a warm bowl of rice.
