Sweet & Savory Corn Cheese Bake
Quick & Easy Corn Cheese using Frozen Sweet Corn Kernels
I’ve made a delicious corn cheese bake using precious sweet corn kernels harvested from my garden and stored in the freezer. The sweetness of the popping corn kernels combined with the rich flavor of melted cheese creates a universally loved taste. For a touch of spiciness that adults and children alike can enjoy, finely chopped chili peppers are added. It’s a fantastic snack that makes great use of frozen corn!
Main Ingredients
- Sweet Corn Kernels 2 cups (frozen or fresh)
- Shredded Mozzarella Cheese 100g
- Finely Diced Onion 1/4 large onion
- Finely Chopped Green Chili Peppers 2 (adjust to taste)
Cooking Instructions
Step 1
First, finely dice the onion and green chili peppers. Mince the onion as finely as possible for a smoother texture when cooked. If you prefer less spice for children, you can omit or reduce the amount of green chili peppers.
Step 2
Heat a pan over medium-low heat. Add the diced onion and 1 Tbsp of mayonnaise. Sauté until the onion becomes translucent. Cooking the onion with mayonnaise helps to enhance its natural sweetness and bind the ingredients together.
Step 3
Once the onion is translucent, add the 2 cups of sweet corn kernels. Stir well with a spatula and cook together. If using frozen corn, you can add it directly without thawing. Cook until the corn is slightly warmed through.
Step 4
Next, add the 2 chopped green chili peppers and a pinch of herb salt. Stir and cook for about 1 minute to allow the flavors to meld. You can use regular salt instead of herb salt, and a dash of black pepper is optional if desired.
Step 5
Finally, generously top with 100g of shredded mozzarella cheese. Reduce the heat to very low and let it cook until the cheese is completely melted. Covering the pan with a lid will help the cheese melt more evenly and keep the dish moist. Once the cheese is bubbly and golden, your delicious corn cheese bake is ready!
