Sweet & Savory Onion Egg Toast
A Healthy and Delicious Special Breakfast: Onion Egg Toast
This isn’t just any ordinary onion toast! I wanted to create a healthier version and ended up with a surprisingly delicious recipe. The combination of sweet, caramelized onions, a soft, fluffy egg layer, and crisp shredded cabbage is simply delightful. Perfect for a satisfying meal or a delightful snack!
Main Ingredients- 2 Onions
- 4 Eggs
- Butter, as needed
- 4 slices Bread
- 1/4 Cabbage
- Strawberry Jam
- Ketchup
- Mayonnaise
- Cooking Oil
Cooking Instructions
Step 1
First, thinly slice the 2 onions into fine strips. Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add the sliced onions and sauté until they become translucent, very soft, and start to sweeten. Cooking them slowly is key to bringing out their natural sweetness.
Step 2
Once the onions are well-cooked and softened, shape them into a square roughly the size of your bread slices directly in the pan. Whisk the 4 eggs until smooth and pour them evenly over the onion layer. Cook gently over low heat until the egg is set and fully cooked, being careful not to burn it. Carefully transfer the onion-egg layer to a plate and let it cool completely.
Step 3
In a separate pan, melt some butter and toast the 4 slices of bread until golden brown and crispy. For the cabbage, thinly shred about 1/4 of it. Rinse the shredded cabbage under cold water to make it crispier, then drain thoroughly to remove all excess moisture. (Tip for shredding cabbage: A vegetable peeler works wonders for achieving thin, quick shreds!) Prepare your strawberry jam, ketchup, and mayonnaise.
Step 4
Spread a thin layer of strawberry jam onto one side of each toasted bread slice. Carefully place the cooled onion-egg layer onto the jam-covered bread. Drizzle with ketchup and mayonnaise to your liking. Top generously with the crisp shredded cabbage. Finally, place the remaining slice of bread on top to complete the sandwich.
Step 5
To keep the toast from falling apart, wrap each sandwich snugly in parchment paper. Once wrapped, use a sharp knife to cut the toast in half. This makes it easier to handle and serve. (For extra crispy toast: After toasting, stand the bread slices upright to cool. You can lean them against each other like a roof to allow air circulation and enhance crispiness.)
Step 6
And there you have it – your delicious Onion Egg Toast! It’s a visually appealing and tasty dish that serves as a perfectly satisfying meal or a delightful snack. Give this ‘Style Jiyun Onion Toast’ a try for your family; they’ll surely love it! 🙂
