First, let’s prepare the vegetables. Peel and thinly slice the onion. Trim the base of the enoki mushrooms and separate them into small strands.

Heat a little cooking oil in a pan over medium heat. Add the sliced onions and stir-fry until they become translucent and tender. Sprinkle a pinch of salt for seasoning, then transfer the sautéed onions to a separate bowl.

Now, it’s time to cook the pork belly. Place the pork belly in a clean pan and cook over medium heat until golden brown and crispy on both sides. If there’s excessive oil, gently pat it dry with paper towels.

Once the pork belly is nicely browned, pour in the prepared soy sauce (4 Tbsp), corn syrup (4 Tbsp), and water (4 Tbsp) into the pan. Cut the pork belly into bite-sized pieces (about 2-3 cm) so it’s easier to mix with the sauce.

Stir the pork belly to ensure it’s thoroughly coated with the sauce. Simmer over medium-low heat until the sauce thickens slightly and the pork belly looks glossy. Then, turn off the heat.
