Ingredients- 1 medium pumpkin
- 3 eggs
- 1 tsp salt
- 1 Tbsp chopped green onion
- 1 slice mozzarella cheese
- 2 Tbsp nacho cheese sauce
- 1 tsp parsley flakes
Cooking Instructions
Step 1
In a bowl, crack 3 eggs. Add 1 tablespoon of chopped green onion and 1 teaspoon of salt. Gently whisk until well combined, ensuring a smooth egg mixture without too much foam.

Wash the pumpkin thoroughly and pat it dry. Place it in a microwave-safe dish and steam for 5-7 minutes, or until it becomes tender. Once steamed, remove from the microwave, wipe off any excess water, and carefully cut a pentagonal lid on top.

Remove the lid you just cut and use a spoon to scoop out all the seeds and stringy bits from the inside of the pumpkin. Make sure the cavity is clean and clear to hold the egg mixture well.

Carefully pour the prepared egg mixture into the hollowed-out pumpkin. Fill it about two-thirds full to allow room for the eggs to puff up as they cook.
Step 5
Top the egg-filled pumpkin with 1 slice of mozzarella cheese. You can also use cheddar cheese slices. Place the pumpkin back into the microwave and cook for about 4 minutes. It’s done when the eggs are cooked and have puffed up.

Remove the pumpkin steamed egg from the microwave. You’ll see the cheese has melted and the egg has cooked to a fluffy texture. If any egg mixture overflowed, don’t worry – it will still be delicious! (Using 2 eggs might be sufficient for a smaller pumpkin).

Cut the cooked pumpkin steamed egg into bite-sized portions. First, make one cut horizontally and one vertically to create 4 wedges. Then, cut each wedge in half again, resulting in 8 pieces. Drizzle 2 tablespoons of nacho cheese sauce over the pieces. Melted sliced cheese can also be used as a topping.
