For the Grilled Eel

  • 250g prepared eel
  • 1 Tbsp Mirin (rice wine)
  • Pinch of salt
  • Pinch of black pepper
  • 0.5~1 Tbsp cooking oil
  • 1 tsp sesame seeds

For the Eel Glaze

  • 4 Tbsp Soy Sauce (flavorful type)
  • 3 Tbsp Mirin (rice wine)
  • 0.5 Tbsp Sugar
  • 1 Tbsp Oligosaccharide
  • 1.5 Tbsp Oyster Sauce
  • 2 Dried Chilies (like Peperoncino, adjust to spice preference)
  • 1 clove Garlic (minced or thinly sliced)
  • 100ml Water

Cooking Instructions

First, gently rinse the prepared eel under running water. To effectively remove any fishy odor, place the eel in a bowl, add 1 tablespoon of Mirin and a little water, and let it soak for 5-10 minutes. This step ensures a cleaner taste.

After soaking in Mirin and water, rinse the eel again and pat it thoroughly dry with paper towels. Ensure there’s no excess moisture to prevent splattering when cooking. Next, make shallow cuts on the skin side of the eel. These cuts help the glaze penetrate better and ensure even cooking.

Lightly season the flesh side of the eel with a pinch of salt and pepper. Avoid seasoning the skin too heavily, as it can become too salty. Let it marinate for about 5-10 minutes.

Heat a pan over low heat and add about 0.5 to 1 tablespoon of cooking oil. Place the seasoned eel in the pan and lightly sear it until the surface is slightly golden brown. This pre-cooking step helps to firm up the eel before glazing.

Now, let’s make the delicious glaze that will give the eel its fantastic flavor! In a small saucepan, combine 4 tablespoons of Soy Sauce, 3 tablespoons of Mirin, 0.5 tablespoon of Sugar, 1 tablespoon of Oligosaccharide, 1.5 tablespoons of Oyster Sauce, 2 dried chilies, 1 clove of thinly sliced or minced ginger, and 100ml of water. Mix these ingredients well and bring to a simmer over medium heat.

Simmer the sauce until it thickens slightly. Continue to cook for about 3-5 minutes after it starts to bubble, allowing it to reduce to a syrupy consistency. Add the pre-seared eel to the glaze and continue to cook over medium heat, flipping it frequently to ensure both sides are well-coated and cooked through. Keep an eye on it to prevent burning.

Once the glaze begins to coat the eel with a glossy sheen, reduce the heat to low. Continue to cook for a few more minutes, flipping a couple of times, to achieve a slightly crisp exterior and a tender, juicy interior. Just before removing from the heat, sprinkle with 1 teaspoon of sesame seeds for a nutty aroma. Cut into bite-sized pieces and serve hot!
