First, peel and trim the ends of the 3 medium onions. Slice them into thin strips about 0.5 cm thick. Avoid slicing them too thinly, as they might become mushy when cooked. Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onions and stir-fry for 2-3 minutes until they become translucent and slightly softened, releasing their aroma. Be careful not to overcook them to a brown color at this stage.

Once the onions are slightly cooked, add 3 tablespoons of soy sauce and 1/2 tablespoon of sugar to the pan. (If you prefer a sweeter taste, you can increase the sugar amount slightly.) Stir well with a spatula to ensure the soy sauce and sugar coat the onions evenly. Cook for about 1 minute, stirring constantly. Pre-mixing the seasonings like this helps the onions absorb the flavors better.

Next, add 2 tablespoons of gochujang (Korean chili paste). Stir thoroughly to incorporate the gochujang into the onions, ensuring there are no clumps. Continue to stir-fry over medium-low heat for another 1-2 minutes, allowing the spicy and savory notes of the gochujang to deeply infuse into the onions.

Once all the seasonings are well combined, cover the pan with a lid. Reduce the heat to low and let it simmer gently for about 5 minutes. This steaming process will enhance the natural sweetness of the onions and allow the sauce to thicken and penetrate deeply, resulting in a more delicious stir-fried onion dish.

After 5 minutes, remove the lid and check the consistency of the stir-fried onions. If you prefer a crispier texture, turn off the heat and serve immediately. However, if you desire a softer texture and a richer, more infused sauce, keep the lid off and continue to simmer over low heat for an additional 2-3 minutes. Adjust the cooking time according to your preference for the perfect stir-fried onions!
