Today, I’m sharing a recipe for sweet and savory zucchini pancakes that everyone from kids to adults will adore. They boast a wonderfully soft texture and a subtle sweetness that’s especially appealing to children. Made with simple ingredients and quick to prepare, why not make them for dinner tonight?
Main Ingredients- 1/3 zucchini
- 1/2 onion
- 1/4 red chili pepper (for color)
- 1 egg
Batter & Seasoning- 1/3 tsp salt
- 1 tsp sugar
- 2 tbsp pancake mix (buchim garu)

Cooking Instructions
Step 1
Prepare 1/3 of a fresh zucchini. First, wash it thoroughly, then julienne it into fine strips about 0.3 cm thick. If they’re too thin, they might break easily, so aim for a moderate thickness.
Step 2
Sprinkle 1/3 tsp of salt over the julienned zucchini and let it sit for 5 to 10 minutes. This process draws out excess moisture, resulting in crispier and tastier pancakes.
Step 3
Julienne 1/2 an onion into fine strips, similar in thickness to the zucchini. The onion’s natural sweetness will enrich the flavor of the zucchini pancakes.
Step 4
If you’d like to add a splash of color, thinly slice 1/4 of a red chili pepper. It will serve as a pretty, flower-like garnish.
Step 5
After 5 to 10 minutes, gently squeeze out the moisture from the zucchini, then add the julienned onion to the bowl. If you’re concerned about the onion’s sharpness, you can soak it in cold water briefly before using.

Add 1 tsp of sugar for a touch of sweetness. This is the secret to making them irresistible, especially for children.

Add 2 tbsp of pancake mix (buchim garu) to achieve the right batter consistency. You can use all-purpose flour or tempura flour, but buchim garu will give you a crispier texture.

Finally, crack in 1 fresh egg. The egg will help bind all the ingredients together.

Now, gently mix all the prepared ingredients using chopsticks or a spatula. Be careful not to mix too vigorously, as it can mash the zucchini. Stir just enough to combine everything evenly.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Once the pan is sufficiently preheated, you’ll add the batter to form the pancakes. For nicely shaped pancakes, using a 4-cup mold pan (as shown) is convenient. If using a regular frying pan, scoop the batter with a spoon and form round shapes.

When placing the batter in the pan, keep them relatively thin rather than thick. This ensures they cook evenly on the inside and become nicely crispy.

Once you’ve spread the thin layer of zucchini batter, carefully place the prepared red chili pepper pieces on top for decoration. The vibrant colors will make them look even more appetizing.

When one side turns golden brown and is cooked, carefully flip the pancakes using a spatula. Cook for about 3 more minutes, and both sides will be beautifully golden. Your delicious zucchini pancakes are ready!
