  • 1/2 cucumber
  • 1/2 onion
  • 1/3 carrot

Dressing Ingredients

  • 5 Tbsp seasoned soy sauce
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp vinegar
  • 2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1 Tbsp perilla oil (or sesame oil)
  • 1 Tbsp sesame seeds

Cooking Instructions

First, rinse the acorn jelly thoroughly under running water. Then, cut it into bite-sized pieces (about 1.5cm thick squares or strips) along with the prepared vegetables (cucumber, onion, carrot). You can julienne or thinly slice the vegetables according to your preference. It’s important to cut the acorn jelly to a moderate thickness, as cutting it too thin can make it crumble easily.

In a small bowl, combine the dressing ingredients: 5 Tbsp seasoned soy sauce, 2 Tbsp sugar, 3 Tbsp vinegar, 3 Tbsp gochugaru, and 1/2 Tbsp minced garlic. Whisk well with chopsticks or a small whisk until the sugar is dissolved. Feel free to adjust the dressing proportions to your personal taste.

Pour the dressing into a large bowl. Add the sliced cucumber, onion, and carrot first, and gently toss to coat the vegetables evenly with the dressing. Mixing the vegetables first helps prevent the acorn jelly from breaking apart.
