Sweet & Sour Stir-Fried Eggplant with Oyster Sauce

This delicious stir-fried eggplant recipe is so good, even eggplant haters will love it! Made using Noh Sa-bong’s method from ‘My Little Old Boy’, it’s incredibly tasty and quick.
Main Ingredients- 1 eggplant
- 1/2 onion
Cooking Instructions
Step 1
Wash the eggplant thoroughly. Then, cut it into large chunks by slicing it diagonally, similar to sharpening a pencil. This cutting technique helps the sauce penetrate better! Dice the onion into similarly sized pieces.

Step 2
Heat a pan over medium heat and add a generous amount of olive oil. Add the cut eggplant and onion and stir-fry until the eggplant becomes translucent and starts to soften.

Step 3
When the eggplant and onion are about half cooked, pour the 1 Tbsp of soy sauce along the edges of the pan to lightly caramelize and release its aroma. Then, add 1 Tbsp of vinegar and 1 Tbsp of sugar, continuing to stir-fry until well combined. This sweet and tangy combination is sure to whet your appetite.

Step 4
Continue to stir-fry for about 1 more minute to allow the sauce to be absorbed by the ingredients. Add the 1/2 Tbsp of oyster sauce, minced garlic (or sliced garlic), and chili pepper if using, and quickly stir-fry everything together until the flavors meld. Finally, turn off the heat, drizzle with sesame oil, and sprinkle with sesame seeds. Give it one last gentle toss, and your delicious stir-fried eggplant is ready!
