Main Ingredients

  • 180g Korean chili peppers (kwari gochu), stems removed
  • 30g Carrot, finely minced
  • 30g Onion, finely minced
  • 30g Sweet potato (preferably a moist variety like ‘ho박고구마’), finely minced
  • 20g Chives, finely chopped
  • 20g Minced garlic
  • 2 Tbsp All-purpose flour

Seasoning Ingredients

  • 2 Tbsp Soy sauce (jin ganjang)
  • 1 tsp Fish sauce (chamchi aek)
  • 1 Tbsp Plum extract (maesil cheong)
  • 1 Tbsp Corn syrup (yoridang) or Oligosaccharide
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame oil
  • 1 Tbsp Sesame seeds (whole)
  • Pinch of black pepper

Cooking Instructions

First, wash the Korean chili peppers thoroughly. After patting them dry, carefully trim off the stem from each pepper with scissors or a knife. This helps maintain their shape during steaming and allows the seasoning to penetrate better.

Place the stemmed peppers and 2 tablespoons of all-purpose flour into a resealable plastic bag. Seal the bag tightly and gently shake it to evenly coat the peppers with a thin layer of flour. This step will give the steamed peppers a more chewy and pleasant texture.

Leave the flour-coated peppers in the bag for about 5 minutes. This allows the flour to adhere well to the peppers, enhancing their texture after steaming.

Next, prepare the vegetables that will add flavor to your stir-fried peppers. Peel and finely mince the carrot, onion, and sweet potato. Finely mincing ensures the vegetables blend well with the seasoning and are easy to eat.

Add the soy sauce, fish sauce, plum extract, corn syrup, gochugaru, sesame oil, sesame seeds, and a pinch of black pepper. Mix everything thoroughly to create a flavorful seasoning paste. You can adjust the amount of soy sauce or plum extract to your taste.

Bring water to a boil in a steamer. Once steaming, line the steamer basket with cheesecloth or parchment paper. Arrange the flour-coated peppers in a single layer, ensuring they don’t overlap. Cover the steamer and cook over medium heat for about 10 minutes, or until the peppers are tender. Adjust the steaming time slightly depending on the size and thickness of the peppers.
