There are so many convenient cake mixes available nowadays! Not just for cakes, but also for cookies, muffins, and even rice cakes. The kids suddenly wanted to make a cake, so I immediately went to the supermarket and bought this delicious vanilla cake mix.

We’ll follow the recipe on the back of the cake mix package to make the batter. Pour the mix into a bowl, add water and one egg, along with the enclosed oil (or have it ready when adding the egg). Whisk everything thoroughly with a whisk until you have a smooth batter with no lumps. It’s important to mix until the batter is smooth and free of lumps.

Once the batter is ready, carefully pour it into the included cake mold (round pan). Gently tap the pan on the counter 2-3 times after pouring the batter; this helps release large air bubbles, ensuring the cake rises evenly. Now, microwave it for about 4 minutes.

A cake base is ready in just 4 minutes! The cooking time may vary slightly depending on your microwave’s power. You can check for doneness by inserting a skewer; if it comes out clean, the cake is done. Carefully remove it and let it cool slightly. It’s really that simple, isn’t it?

Now it’s time to prepare the whipped cream, the star of the cake! I used vanilla sugar to add extra flavor. If you have vanilla extract, adding a drop or two will enhance the aroma beautifully. Prepare a bowl and tools for whipping the cream.

Pour the cold heavy cream into the bowl and start whipping with a hand mixer or whisk. Begin on a low speed, and once the cream starts to thicken slightly, add the sugar (or vanilla sugar) and continue whipping. Whip until you achieve the desired stiff peaks. Generally, about 10% sugar is added to the cream, but to avoid it being too sweet, I recommend adding about 20g of sugar (approx. 1.5-2 Tbsp) for 300ml of cream. Whip until stiff peaks form.

Drain the canned fruit cocktail thoroughly using a sieve. Excess water can make the cream slide off, so it’s essential to drain it well. Also, have the fresh strawberries, washed by the kids, ready for decoration.

Don’t worry if the cake base is slightly uneven! Use a serrated knife to carefully slice the cake base horizontally in half. Prepare to spread the whipped cream on the cut surfaces. If you’re doing this with kids, this step can also be a fun part of the process.

You can skip brushing the cake base with syrup if you prefer. (Omitting syrup results in a less sweet, more natural flavor.) Now, spread the stiffly whipped cream evenly over one half of the sliced cake base. Scatter the drained fruit cocktail evenly on top. The texture of the fruit will make the cake even more delightful.
