Delicious Homemade Sweet Potato Bread – A Nutritious Snack
Sweet potatoes are rich in dietary fiber, making them a great addition to a healthy diet. Learn how to make a delicious snack bread using fresh, seasonal sweet potatoes. This recipe is perfect for all ages and offers a delightful, soft texture with a natural sweetness.
Sweet Potato Bread Ingredients- 3 large sweet potatoes
- A handful of raisins
- 1 tsp sugar
- 2 eggs
- 3 Tbsp soymilk (or milk)
Cooking Instructions
Step 1
First, thoroughly wash the sweet potatoes. Steam them in a steamer basket over boiling water for about 20 minutes, or until they are very tender and cooked through. You can also peel and boil them, but steaming with the skin on helps retain more flavor and nutrients. Ensure they are soft enough to mash easily.
Step 2
Next, prepare the 2 eggs and raisins. Carefully separate the egg whites from the yolks. The yolks will be used to mix with the mashed sweet potato, and the whites are for making meringue.
Step 3
In a clean bowl, add the egg whites and 1 tsp of sugar. Using a whisk, beat the egg whites in one direction continuously to create soft peaks. This process incorporates air, which is essential for a light and fluffy meringue.
Step 4
Continue whisking in the same direction. You will notice the egg whites gradually thickening and forming very fine, smooth bubbles. Keep whisking until you achieve a glossy and smooth meringue texture.
Step 5
To check if the meringue is ready, lift the whisk. If the meringue forms firm peaks that stand upright without drooping, it’s considered properly made. This indicates it has enough structure to hold its shape.
Step 6
While the steamed sweet potatoes are still warm, mash them thoroughly. Add the 2 egg yolks and 3 Tbsp of soymilk (or milk) to the mashed sweet potato and mix well. Aim for a smooth and creamy consistency.
Step 7
The fineness of the mashed sweet potato will affect the final texture of your bread. Mash it as smoothly as possible to achieve a finer crumb and a more pleasant mouthfeel.
Step 8
Gently fold the prepared meringue into the mashed sweet potato mixture. It’s crucial to incorporate the meringue without deflating its airy structure.
Step 9
Using a spatula, carefully fold the meringue into the sweet potato mixture by lifting from the bottom and folding over. Mix just until combined, being careful not to overmix, which can cause the meringue to lose volume and result in a denser bread.
Step 10
Transfer the sweet potato mixture into a microwave-safe dish, spreading it out evenly. Sprinkle the raisins on top. Alternatively, you can mix the raisins directly into the sweet potato batter before pouring.
Step 11
Microwave the dish for 7 minutes. Cooking times may vary slightly depending on your microwave’s wattage, so it’s a good idea to check for doneness partway through.
Step 12
Carefully invert the bread onto a plate. While the texture might not be perfectly smooth, you’ll have a lovely, sweet snack bread with a wonderful sweet potato flavor. Slice into desired portions and enjoy your homemade treat!
