Main Ingredients- 200g Dried Shredded Squid (Baek Jinmichae)
- 2 Tbsp Mirin (or other cooking wine)
- 1.5 Tbsp Mayonnaise
- A pinch of sesame seeds
Sauce Ingredients- 2 Tbsp Ketchup
- 5 Tbsp Water
- 2 Tbsp Soy Sauce
- 0.5 Tbsp Vinegar
- 1 Tbsp Brown Sugar
- 1.5 Tbsp Allulose (or corn syrup)
- 0.5 Tbsp Cooking Oil
- 2 Tbsp Ketchup
- 5 Tbsp Water
- 2 Tbsp Soy Sauce
- 0.5 Tbsp Vinegar
- 1 Tbsp Brown Sugar
- 1.5 Tbsp Allulose (or corn syrup)

Cooking Instructions
Step 1
First, cut the dried shredded squid into manageable pieces, about 5-7cm long, using scissors. This makes them easier to eat, especially for children.

Place the cut dried shredded squid into a microwave-safe bowl. Sprinkle 2 tablespoons of mirin evenly over the squid. Cover the bowl or wrap it with plastic wrap, and microwave for about 30 seconds. (You can microwave for an additional 10 seconds if you prefer).

Microwaving the squid briefly helps to remove any gamey odor and adds moisture, making it much softer and chewier. This step prevents the squid from becoming tough and dry when stir-fried.

Now, let’s prepare the stir-fry sauce. In a pan, combine 2 tablespoons of ketchup, 5 tablespoons of water, 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1.5 tablespoons of allulose, 0.5 tablespoon of vinegar, and 0.5 tablespoon of cooking oil. Stir well until the brown sugar dissolves completely. Then, bring the sauce to a rolling boil over high heat.

Once the sauce is boiling, add the softened dried shredded squid (from the microwave step) to the pan. Stir-fry over medium-low heat for about 3 minutes, ensuring the sauce coats the squid evenly. It’s important to keep stirring so the squid absorbs the flavors well. Turn off the heat after 3 minutes.

With the heat off, add 1.5 tablespoons of mayonnaise and gently mix using the residual heat. Mixing the mayonnaise while the squid and sauce are still warm helps it to coat everything smoothly, adding a rich and creamy texture.
