Sweet & Tangy Crispy Radish Pickles for Fried Chicken
Easy Homemade Pickled Radish (Chicken Mu) – Perfect with Air Fryer Chicken Wings!
Craving a snack? I made some crispy chicken wings and paired them with the essential side: pickled radish! This ‘chicken mu’ is incredibly refreshing and delicious when chilled in the fridge for a day or two. Let’s make this simple and satisfying pickle together!
Ingredients- 1 medium daikon radish
- 2 cups water
- 1 cup sugar
- 1 cup vinegar
- 1.5 Tbsp salt
Cooking Instructions
Step 1
In a pot, combine 2 cups of water, 1 cup of sugar, 1 cup of vinegar, and 1.5 Tbsp of salt. Bring to a boil over medium heat, stirring until the sugar and salt are completely dissolved. Once boiling, let it simmer for about 1 minute, then turn off the heat. (Using hot brine helps the radish stay extra crisp.)
Step 2
Peel the daikon radish, wash it thoroughly, and cut it into bite-sized cubes (about 1.5 cm). Place the cubed radish into a sterilized glass jar.
Step 3
Pour the hot brine over the radish cubes in the jar, ensuring the radish is fully submerged. This ensures even flavor distribution. (Tip: If you prefer less sweetness, you can adjust the sugar or use a natural sweetener like stevia extract, as used in the recipe with ‘Truvia’.)

Once the brine has cooled completely, cover the jar and refrigerate. After a day or two, your sweet, tangy, and crunchy pickled radish will be ready to enjoy.
Step 5
Meanwhile, let’s prepare the air fryer chicken wings. Rinse the chicken wings and pat them dry with paper towels. In a bowl, combine the wings with 2 Tbsp of cooking wine (mirin) and 1/2 tsp of salt. Marinate for 30 minutes.

For the coating, mix 3 Tbsp of flour with 4.5 Tbsp of water to create a batter (a 1:1.5 flour-to-water ratio). Ensure the wings are evenly coated with this batter.

Arrange the battered chicken wings in a single layer in the air fryer basket, ensuring they don’t overlap for even cooking.
Step 8
Preheat your air fryer to 180°C (350°F). Place the wings in the basket and cook for 20 minutes. Flipping them halfway through will help them cook more evenly.
Step 9
After 20 minutes, flip the wings and cook for an additional 10 minutes, or until they are golden brown and crispy. Adjust the cooking time based on your desired level of crispiness.
