Avoid placing the jar directly into boiling water, as the sudden temperature change could cause it to break. Instead, place the jar upside down in a pot of boiling water and let it steam for about 5-10 minutes. Alternatively, after washing the jar thoroughly, fill it with about 1/4 cup of soju (Korean rice wine), shake it to sanitize, then discard the soju and let it air dry in the sun. When using soju for sterilization, do not rinse the jar afterward; leaving a slight soju aroma can enhance its preservative qualities.

Separating the tangerine segments can take more time than you might expect. Carefully use a knife or spoon to gently pry apart the segments, being mindful not to let the juice escape. Collect all the juice that is released; we will use it all. It’s a good idea to have the sterilized jar ready and cooled down by the time you finish separating the segments. The jar should have enough time to cool while you’re working on the tangerines.
