Fried Rice Ingredients
- Dried shrimp, 1/3 cup (using a standard paper cup)
- Eggs, 2
- Warm cooked rice, 2 servings
- Fresh pineapple, 1/8 piece (cut into bite-sized pieces)
- Olive oil, 1/3 cup (using a standard paper cup)
- Green onions (scallions), 2 stalks (chopped)
- Onion, 1/2 (finely diced)
Fried Rice Sauce
- Oyster sauce, 1 Tbsp
- Water, 1 Tbsp
- Fish sauce, 1 Tbsp
- Sugar, 1 Tbsp
- Oyster sauce, 1 Tbsp
- Water, 1 Tbsp
- Fish sauce, 1 Tbsp
- Sugar, 1 Tbsp
Cooking Instructions
Step 1
First, prepare all the ingredients for your fried rice. Measure out 1/3 cup of dried shrimp (using a paper cup), crack 2 eggs, and cut 1/8 of a fresh pineapple into bite-sized pieces. Finely chop 2 stalks of green onion and dice half an onion. Ensure your cooked rice is warm.
Step 2
Now, let’s make the sauce. In a small bowl, combine 1 Tbsp of oyster sauce, 1 Tbsp of water, 1 Tbsp of fish sauce, and 1 Tbsp of sugar. Whisk everything together until well combined. This sauce blend will provide a wonderful umami depth to your fried rice.
Step 3
Heat a large skillet or wok over medium-high heat. Add a generous amount of olive oil, about 1/3 cup (measured with a paper cup). Once the oil is hot, add all the chopped green onions. Stir-fry them until they release their fragrant aroma, creating ‘scallion oil.’ As Chef Baek Jong-won often emphasizes, mastering the scallion oil is key to delicious fried rice!
Step 4
Once the scallion oil is fragrant, push the green onions to one side of the pan to create space. Crack the 2 eggs into the empty space and scramble them until just cooked, stirring occasionally. Then, add the 1/3 cup of dried shrimp and stir-fry them with the eggs and scallions until the shrimp is fragrant and the eggs are fully cooked. Be careful not to burn the shrimp.
Step 5
Add the 2 servings of warm cooked rice to the pan. Break up any clumps with your spatula. Now, add the finely diced onion and stir-fry until it becomes slightly translucent. Pour in the prepared sauce mixture and stir well to ensure the rice is evenly coated and seasoned. Finally, toss in the diced pineapple and stir-fry everything together for a minute or two until well combined. Your delicious fried rice is almost ready!
Step 6
Serve the finished pineapple onion fried rice onto a plate. Enjoy it while it’s hot! The delightful sweetness of pineapple, the savory aroma of onion, and the rich flavor of dried shrimp create a truly appetizing and special fried rice experience.
