Cooking Instructions

Step 1

First, thoroughly wash the peels of the fresh tangerines. Rinsing them under running water multiple times will ensure they are perfectly clean.

Step 2

In a pretty bowl, place the 85g of unsweetened plain yogurt. Arrange it neatly as you will be topping it with the tangerine mixture.

Step 3

Peel the 2 tangerines and separate them into segments. Place the segments in a small bowl and gently mash them with the back of a spoon to release their juice. You can include the white pith (albedo) if you like its slightly bitter note, or remove it if you prefer a purely sweet taste. If you’ve washed the peels thoroughly, you can finely julienne them for garnish, or squeeze them along with the segments to extract more juice. (Including some zest or finely chopped peel can add a unique aromatic complexity.)

Step 4

To the bowl with the mashed tangerine segments and juice, add a pinch of salt (approx. 0.4 tsp), a dash of black pepper (approx. 0.3 tsp), 1 tsp of extra virgin olive oil, and 1 tsp of fresh lemon juice. Whisk gently with a fork or a small whisk until all the dressing ingredients are well combined.

Step 5

Pour the prepared tangerine dressing attractively over the yogurt in the bowl. Arrange the tangerine segments and any optional peel garnish so they look appealing. Your delicious tangerine yogurt salad is now complete! Enjoy it immediately for the best flavor.
