This Aehobak Saeu-jeot Jjigae is simmered with just enough broth to make it perfect for enjoying as a hearty soup alternative. Its natural sweetness from the zucchini makes it a delightful and comforting dish.
Main Ingredients- 1 medium zucchini
Seasonings & Other Ingredients- 1/2 Tbsp dried anchovy powder
- 1/2 Tbsp minced garlic
- 1.5 Tbsp dried shrimp (or tiny dried shrimp)
- A small amount of green onion
- 1/3 Tbsp salted shrimp (saeujeot)
- 1/2 Tbsp dried anchovy powder

Cooking Instructions
Step 1
Wash the zucchini thoroughly and slice it into thick half-moon shapes. Place the sliced zucchini in a pot and add enough water to just cover the zucchini. (If you don’t have anchovy broth, you can add dried anchovy powder to flavor the soup base.)
Step 2
Once the water comes to a boil, add the dried shrimp (or tiny dried shrimp) and the minced garlic. For a pleasant texture, it’s best to mince the garlic coarsely rather than finely.
Step 3
After the stew has simmered for a bit, add the chopped green onions. Finally, season the stew with salted shrimp to taste. You can also use just the liquid from the salted shrimp for a cleaner, refined flavor.
