The popular Royal Cheese Potato from Taiwan’s night markets has now landed in Jeonju’s Hanok Village! This recipe brings the iconic street food to your home kitchen. Main Ingredients- 2 potatoes
- 1/3 Tbsp salt (for boiling potatoes)
- 2 Tbsp minced onion
- 2 Tbsp diced bell peppers (mixed colors)
- 3 Tbsp diced tomato (seeds and skin removed)
- 3 Tbsp cooked bacon, finely chopped
- 3 Tbsp canned corn, drained
- A pinch of parsley flakes (for garnish)
Creamy Cheese Sauce- 2/3 cup (approx. 140ml) milk
- 6 slices cheddar cheese
- 1 1/2 Tbsp Sriracha sauce (adjust to taste)
- 2 Tbsp corn syrup
- A pinch of salt

Cooking Instructions
Step 1
Start by thoroughly washing the potatoes. Place them in a pot and add enough water to cover the potatoes completely. Add 1/3 tablespoon of salt to the water and boil the potatoes until they are tender. This usually takes about 20-25 minutes. Check for doneness by piercing with a fork.
Step 2
To ensure the potatoes are cooked through, insert a fork into one of them. If the fork slides in easily and smoothly, the potatoes are perfectly cooked. Be careful not to overcook them, as they can become mushy.
Step 3
Now, let’s prepare the cheese sauce. In a separate saucepan, pour in the 2/3 cup of milk and heat it over medium heat. Once the milk begins to simmer, reduce the heat to low. Add the 6 slices of cheddar cheese and stir until it’s completely melted and smooth. Next, stir in the 1 1/2 tablespoons of Sriracha sauce, 2 tablespoons of corn syrup, a pinch of salt, and a pinch of black pepper. Continue to simmer gently for a short while until the sauce thickens slightly. Taste and adjust the seasonings (salt or Sriracha) according to your preference.
Step 4
Once the boiled potatoes have cooled slightly, peel off their skins. Place the cooked potatoes in a serving dish. Using a knife, make 2 to 4 deep cuts into the top of each potato. These cuts will allow the delicious cheese sauce to seep into the potato, enhancing the flavor. Generously pour the warm cheese sauce over the cut potatoes.
Step 5
Finally, arrange the prepared toppings attractively over the cheese-covered potatoes. Sprinkle the minced onion, diced bell peppers, diced tomato, chopped cooked bacon, and drained corn kernels evenly on top. Finish with a light dusting of parsley flakes for a touch of color and fresh aroma. Serve immediately while warm for the best experience!
