Main Ingredients

  • 1 pack (115g) Chicken Breast
  • 500ml Chilled Naengmyeon Broth (pre-frozen for extra chill)
  • 100g Thin Wheat Noodles (Somen)
  • 40g Cucumber
  • 1 Hard-boiled Egg
  • 1 Tbsp Toasted Sesame Seeds (for garnish)

Delicious Mustard Sauce

  • 0.5 Tbsp Soy Sauce
  • 0.5 tsp Minced Garlic
  • 2 Tbsp Vinegar
  • 0.5 Tbsp Mustard Powder (adjust to taste)
  • 0.5 Tbsp Sugar

Cooking Instructions

Step 1

First, prepare the garnishes. Wash the 40g of cucumber and thinly julienne it. Cut the hard-boiled egg in half. Presentation makes the meal even more enjoyable!

Step 1

Step 2

Place the 1 pack (115g) of chicken breast in the microwave and heat for about 2 minutes until warm. Once slightly cooled, shred the chicken breast along the grain. This will make it tender and easier to eat. Be careful as it will be hot!

Step 2

Step 3

Now, let’s make the mustard sauce that gives Chogye Guksu its signature flavor! In a small bowl, combine 0.5 Tbsp soy sauce, 0.5 Tbsp sugar, 0.5 Tbsp mustard powder, 2 Tbsp vinegar for that tangy kick, and 0.5 tsp minced garlic. Mix well until thoroughly combined. The pungent mustard and sour vinegar will awaken your appetite.

Step 3

Step 4

Add the prepared mustard sauce to the shredded chicken breast. Gently mix and toss until the chicken is evenly coated with the sauce. This creates your delicious chicken topping!

Step 4

Step 5

Boil 100g of somen noodles in plenty of water for about 3 minutes. Somen cooks very quickly, so keep an eye on it! To ensure the noodles are perfectly al dente, add about half a cup of cold water 2-3 times when the water starts to boil vigorously.

Step 5

Step 6

Once the noodles are cooked, drain them and rinse thoroughly under cold running water, rubbing them gently with your hands. This process removes excess starch, resulting in a cleaner taste and a delightfully chewy texture.

Step 6

Step 7

Arrange the rinsed somen noodles in a deep bowl or a noodle bowl. Top with the flavorful mustard-seasoned chicken, fresh cucumber juliennes, and the halved hard-boiled egg. Arrange them attractively for a beautiful presentation.

Step 7

Step 8

Finally, pour a generous amount of the chilled naengmyeon broth (preferably pre-frozen) over the noodles and toppings. The icy broth will instantly cool you down on a warm day. You can also use tsuyu or dongchimi broth for a different flavor profile.

Step 8

Step 9

Your delicious Chogye Guksu is ready! Enjoy the refreshing combination of tangy mustard sauce, tender chicken, and icy broth. Perfect for a satisfying and cooling meal!
