Kimbap Ingredients

  • 4 sheets of Gim (seaweed)
  • 400g well-fermented aged kimchi (muk eun ji)
  • 2 bowls of freshly cooked rice
  • 1 Tbsp plum extract (maesil cheong)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 3 eggs
  • A small amount of stir-fried anchovies (optional)

Cooking Instructions

Step 1

First, prepare the aged kimchi filling. Jongga Jib’s aged white kimchi is already well-fermented and ready to use, saving you the hassle of washing it.

Step 1

Step 2

We’ll go through a simple seasoning process to enhance the flavor of your aged kimchi kimbap. This step will make your kimbap even more delicious.

Step 2

Step 3

Chop the aged kimchi into bite-sized pieces. Cut the kimchi leaves lengthwise. Cutting them too short might reduce the satisfying chewiness in the kimbap.

Step 3

Step 4

Add 1 tablespoon of sweet plum extract and 1 tablespoon of fragrant sesame oil to the chopped kimchi. The plum extract helps to mellow the sourness of the kimchi and adds depth of flavor.

Step 4

Step 5

Gently mix the seasoned kimchi. It’s crucial to squeeze out as much liquid as possible from the kimchi before mixing to ensure the kimbap doesn’t become soggy and maintains a crisp texture. Now, let’s begin making your delicious aged kimchi kimbap!

Step 5

Step 6

Prepare the rice, the foundation of your kimbap. Season the warm, freshly cooked rice lightly with sesame oil and a pinch of salt. Separately, whisk the eggs, cook thin omelets, and slice them. With the seasoned kimchi and optional stir-fried anchovies ready, your filling preparation is complete.

Step 6

Step 7

Lay a sheet of gim on a kimbap rolling mat. Spread a thin, even layer of the seasoned rice over the gim. Be careful not to make the rice layer too thick, as it might cause the kimbap to break. Then, add the prepared seasoned kimchi and egg omelet. For an even richer flavor, you can add some savory stir-fried anchovies.

Step 7

Step 8

Using the kimbap mat, tightly and neatly roll the kimbap. You can slightly moisten the edge of the gim with a few grains of rice to help it seal securely. Slice your beautifully made aged kimchi kimbap and enjoy!
