Laver Salad (Parae Muchim)

Main Ingredients- 2 bunches Laver (Parae)
- 200g Radish
- 0.5 tsp Coarse Salt
- 1 tsp Sugar
- 2 tsp Vinegar
Seasoning Ingredients- 1 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 3 Tbsp Vinegar
- 1 Tbsp Soy Sauce for Soup (Gukganjang)
- 1 Tbsp Corn Syrup or Oligosaccharide
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 1 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 3 Tbsp Vinegar
- 1 Tbsp Soy Sauce for Soup (Gukganjang)
- 1 Tbsp Corn Syrup or Oligosaccharide
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, julienne the radish into thin strips (about 0.5cm thick). Place the julienned radish in a bowl, add 0.5 tsp coarse salt, 1 tsp sugar, and 2 tsp vinegar. Mix well and let it marinate for about 15-20 minutes until the radish is softened. Don’t discard the liquid released from the radish; we’ll use it in the dressing. While the radish is pickling, rinse the laver thoroughly in cold water 4-5 times to remove any impurities. Squeeze out excess water gently.
Step 2
The key to a delicious Parae Muchim is the seasoning! In a small bowl, combine 1 Tbsp sugar, 1 Tbsp gochugaru, 1 tsp minced garlic, 3 Tbsp vinegar, 1 Tbsp soy sauce for soup, and 1 Tbsp corn syrup. Whisk everything together until well combined to create the dressing.
Step 3
Add the well-drained laver to the marinated radish. Pour the prepared dressing over the mixture. Make sure to include all the liquid that came out from the radish when it was pickling; this adds to the flavor and seasoning. Gently toss and mix everything with your hands until the laver and radish are evenly coated with the dressing. Be careful not to mix too vigorously, as this can make the laver mushy.
Step 4
Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with a pinch of toasted sesame seeds. Toss gently one more time to incorporate these final flavors. The aroma of sesame oil and seeds will enhance the dish.
