Brining Liquid Ingredients- 1 cup sugar (based on 200ml cup)
- 1 cup vinegar (based on 200ml cup)
- 1 cup water (based on 200ml cup)
- 2 bay leaves (for aroma)
- 5 whole black peppercorns (for flavor)
- 1 cup sugar (based on 200ml cup)
- 1 cup vinegar (based on 200ml cup)
- 1 cup water (based on 200ml cup)
- 2 bay leaves (for aroma)
- 5 whole black peppercorns (for flavor)
Cooking Instructions
Step 1
First, place 6 eggs in a pot and cover them with water. Add 1 tablespoon of salt to the water; this helps prevent the eggs from cracking while boiling and makes them easier to peel later. Once the water comes to a boil, reduce the heat to medium and cook for 10 minutes until the eggs are fully hard-boiled and firm.
Step 2
Immediately transfer the boiled eggs to cold water to cool them down. This step makes peeling much easier. Once peeled, you can use the eggs whole or cut them in half if you prefer. Finely chop the deseeded red chili and Cheongyang chili peppers. Place the peeled eggs and chopped peppers into a sterilized glass jar.
Step 3
Now, let’s prepare the delicious brining liquid! In a clean pot, combine 1 cup of sugar, 1 cup of water, 2 bay leaves, and 5 whole black peppercorns. Bring to a boil over medium heat, stirring occasionally until the sugar is completely dissolved. The bay leaves and peppercorns will infuse the liquid with a wonderful aroma and depth of flavor.
Step 4
Once the brining liquid is at a rolling boil, reduce the heat to low and slowly pour in 1 cup of vinegar. Let it boil for just 1 more minute after adding the vinegar. Your tangy and sweet brining liquid is ready! Carefully pour the hot liquid over the eggs and peppers in the jar. The hot liquid will start to pickle the eggs and peppers, creating a delicious condiment.
Step 5
Ensure your glass jar is clean and sterilized (you can rinse it with hot water). Allow the jar to cool completely before sealing it with a lid. Sealing while hot can cause condensation. Once cooled, close the lid tightly and refrigerate for at least 1 to 2 days to allow the flavors to meld and develop. The longer it sits, the tastier it gets! Enjoy your homemade tangy egg pickles as a unique snack or side dish.
