Main Ingredients

  • 2/3 pack Fresh Cherry Tomatoes (approx. 300g)
  • 1/2 medium Fresh Onion

Cooking Instructions

Step 1

First, remove the stems from the fresh cherry tomatoes and wash them thoroughly. Then, make a small cross-shaped incision on the skin of each tomato with a small knife. This little trick makes peeling them much easier later on. Next, blanch the tomatoes briefly in boiling water.

Step 1

Step 2

While the tomatoes are blanching, peel and finely mince the onion. If you prefer a milder onion flavor, you can soak the minced onion in cold water for about 5 minutes, then drain it thoroughly. This completes the ingredient preparation!

Step 2

Step 3

Once blanched, immediately transfer the cherry tomatoes to a bowl of ice-cold water to stop the cooking process and cool them down. This helps maintain their crisp texture. After draining them completely, gently peel off the skin, starting from the incisions you made earlier. You’ll find the skin slips off quite easily!

Step 3

Step 4

Place the peeled cherry tomatoes and the finely minced onion into a mixing bowl. Now, measure and add the rich extra virgin olive oil and the tangy balsamic vinegar. Using a spatula or spoon, gently toss everything together, ensuring the dressing coats all the ingredients evenly without mashing the tomatoes.

Step 4

Step 5

And there you have it – your delicious tomato marinade is ready! While it’s wonderful to enjoy immediately, chilling it in the refrigerator will make it even more refreshing. For a deeper, more complex flavor, you can let it marinate at room temperature for about a day before serving. The flavors will meld beautifully over time, creating an exquisite taste sensation!
