- Soy sauce, 1 Tbsp (Korean soup soy sauce or regular soy sauce)
- Maesilcheong (Plum extract/syrup), 1 Tbsp (for sweetness and shine)
- Minced garlic, 1/2 Tbsp (or 1 Tbsp if you love garlic flavor)
- Gochujang (Korean chili paste), 1 Tbsp
- Gochugaru (Korean chili flakes), 1 Tbsp (use 1.5 Tbsp for extra spice)
- Soy sauce, 1 Tbsp (Korean soup soy sauce or regular soy sauce)
- Maesilcheong (Plum extract/syrup), 1 Tbsp (for sweetness and shine)
- Minced garlic, 1/2 Tbsp (or 1 Tbsp if you love garlic flavor)
Cooking Instructions
Step 1
First, bring a generous pot of water to a boil. Add the somen noodles and cook for about 30 seconds to 1 minute less than the package instructions suggest. This helps maintain their chewy texture. Once cooked, immediately drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Drain them completely to prevent them from becoming mushy.
Step 2
In a small bowl, combine the gochujang (1 Tbsp), gochugaru (1 Tbsp), soy sauce (1 Tbsp), maesilcheong (1 Tbsp), and minced garlic (1/2 Tbsp). Mix well with a spoon until the sauce is smooth and well combined. Wash the cabbage leaves and thinly slice them into shreds. Now, place the cooked somen noodles and shredded cabbage into a mixing bowl. Pour all the prepared sauce over them. Using your hands or chopsticks, gently toss and mix everything together, ensuring the sauce evenly coats the noodles and cabbage. It’s crucial to mix well so the flavors meld into the noodles!
Step 3
Transfer the beautifully mixed Bibim Guksu to a serving bowl. Garnish with the half hard-boiled egg, sliced for easy eating, and some of the crisp shredded cabbage. Feel free to add other toppings like thinly sliced cucumber, lettuce, or kimchi for an even more delicious meal! Now you’re all set to enjoy this wonderfully tangy, sweet, and spicy noodle dish. Enjoy your meal!
