Tomato Marinade Ingredients

  • 1 medium onion
  • 1 tbsp dried parsley flakes
  • 10 tbsp extra virgin olive oil
  • 5 tbsp balsamic vinegar

  • 1.5 tbsp honey (or agave syrup)
  • Salt to taste

Cold Pasta Ingredients

  • Approx. 1 cup of prepared tomato marinade
  • 1 cup pasta (e.g., spaghetti, linguine) (approx. 100g)
  • 1 tbsp salt (for boiling pasta)
  • 1 tbsp grated Parmesan cheese (optional)

First, finely mince the onion. Finely chopped onion will integrate better with the tomatoes, providing a pleasant texture to the marinade.
