Main Ingredients

  • 1 cucumber
  • 0.5 Tbsp salt

Seasoning

  • 3 Tbsp sesame seeds (toasted and lightly crushed)
  • 3 Tbsp oligodang (Korean corn syrup) or honey (adjust sweetness)
  • 2 Tbsp vinegar (adjust acidity)
  • 2 Tbsp soy sauce
  • 1.5 Tbsp whole grain mustard
  • 1 Tbsp sesame oil

Cooking Instructions

Wash the cucumber thoroughly under running water and trim off both ends.

Cut the trimmed cucumber in half lengthwise, and then slice it thinly on a bias (at an angle). Aim for thin slices for better flavor absorption and a pleasant texture.

Place all the thinly sliced cucumbers into a mixing bowl. This is where we’ll prepare them for salting.

Sprinkle 0.5 Tbsp of salt over the cucumber slices and mix gently to coat. Let it sit for about 10 minutes to draw out excess moisture. This step is crucial for keeping the cucumber crisp.

After salting, DO NOT rinse the cucumber under water. Instead, drain the excess liquid by placing the cucumber in a colander for about 5 minutes. We only want to remove the water released from salting, not wash away the flavor.

Transfer the drained cucumber back into a clean bowl. It’s now ready to be mixed with the delicious dressing.

Add the oligodang, vinegar, soy sauce, whole grain mustard, sesame oil, and the crushed sesame seeds to the bowl with the cucumber. Gently toss everything together to combine.
