One day, I suddenly craved abalone butter-seared! Without hesitation, I bought abalone from the market and made it. I’m not entirely sure why I suddenly wanted abalone butter-seared, but the thought just popped into my head. Do you ever experience sudden cravings for specific dishes? It happens to me occasionally, and today was one of those days. I hadn’t seen or thought about abalone recently, so it’s still a mystery why I suddenly desired abalone butter-seared. Perhaps my body was calling for it? When I went to the market to buy abalone for this dish, I pondered whether to get 4 for 10,000 won or 5 for 10,000 won. Both were the same price, but one option offered larger, plump abalones, while the other had slightly smaller ones. ‘Today, I’ll choose quantity over size,’ I decided, purchasing 5 abalones for 10,000 won (2,500 won each!). I felt that just abalone might be a bit plain, so I added some button mushrooms and king oyster mushrooms from my fridge. For a splash of color, I also included red and yellow bell peppers. Main Ingredients- 5 fresh live abalones
- 4 button mushrooms
- 2 king oyster mushrooms
- 1/2 red bell pepper
- 1/2 yellow bell pepper
Cooking Instructions
Step 1
Clean the abalone under running water. Gently scrub the outer surface with a toothbrush or a soft brush to remove any grit or debris. This ensures a clean and pleasant eating experience.
Step 2
Next, we need to separate the abalone from its shell. Locate the sharp teeth on the underside of the abalone meat. Carefully insert a spoon between the shell and the meat, near the teeth, and gently pry the meat away. Try to do this smoothly to avoid bursting the innards.
Step 3
Once the meat is detached, remove any remaining innards clinging to the flesh. You’ll also need to remove the hard teeth, which can be found at the base of the meat where it was attached to the shell. Removing the teeth makes the abalone much more enjoyable to eat.
Step 4
After cleaning and preparing the abalone, score the surface of the meat with a knife. Make shallow, crisscross cuts all over the abalone. This not only helps the seasoning penetrate better but also allows the abalone to cook more evenly and tenderly.
Step 5
Prepare the mushrooms by wiping them clean with a damp paper towel. Cut the button mushrooms and king oyster mushrooms into bite-sized pieces, similar in size to the abalone if possible. Avoid cutting them too small, as they can shrink considerably when cooked.

Cut the red and yellow bell peppers into similar bite-sized pieces as the mushrooms. Removing the seeds and membranes beforehand will make them easier to eat.
Step 7
Melt 1 tablespoon of butter in a pan over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant, being careful not to burn the garlic. This infuses the butter with a delicious garlic aroma.

Once the garlic is fragrant, add the prepared abalone to the pan. It’s best to place the scored side down first to help it cook evenly and prevent curling.

Cook the abalone over low to medium heat. High heat can cause the garlic and abalone to burn quickly. Slow cooking on lower heat allows the flavors to meld beautifully and ensures a tender texture without scorching.
Step 10
When the abalone is almost cooked through, remove it from the pan (or push it to the side if your pan is large enough). Wipe the pan clean if needed, then add the remaining 1 tablespoon of butter and melt it. Add the remaining 1 tablespoon of minced garlic and sauté until fragrant again.

Add the sliced button mushrooms and king oyster mushrooms to the pan with the garlic butter. Sauté them until they begin to soften and absorb the flavors.

Once the mushrooms are tender, add the chopped bell peppers. Stir-fry for about 20 seconds, just until they are slightly tender but still retain a bit of crispness. Quickly remove the pan from the heat to preserve the vibrant colors and fresh taste of the peppers.
