I bought a whole beef tongue from wholesale. I used the front part to make this boiled dish (usullyeok) and cut the back part for grilling (rose gui). It’s chewier and more delicate than brisket boiled dish, making it even more delicious. Enjoy this flavorful and satisfying dish at home!
Ingredients- Beef Tongue (Usul) 1 whole
- Celery 1 stalk
- Garlic cloves 5-6
- Green onion 1 stalk
- Bay leaves 2-3
- Coarse salt (for boiling) pinch
- Onion 1/2
- Lemon 1/2 (for serving)
- Soy sauce (for dipping)
Cooking Instructions
Step 1
First, prepare the beef tongue for the boiled dish and the vegetables and aromatics to be used during cooking: celery, garlic, green onion, onion, bay leaves, and coarse salt. The lemon will be used as a fresh garnish and for the dipping sauce.
Step 2
Place the cleaned beef tongue in a bowl of cold water and let it soak for 1 hour to remove any blood. This step is crucial for a clean flavor and to eliminate any gamey smell. You can change the water once or twice during soaking for better results.
Step 3
Slice the front part of the soaked beef tongue into pieces suitable for grilling (rose gui). This allows you to prepare a separate, delicious grilled dish from the same cut, adding variety to your meal.

In a large pot, combine the drained beef tongue, prepared aromatics (celery, garlic, green onion, onion, bay leaves), and enough water to cover the tongue completely. Bring to a boil over high heat, then reduce to medium-low. Simmer for 50 minutes, or until the beef tongue is tender when pierced with a fork. Adjust cooking time as needed depending on the size of the tongue.

Once cooked, remove the beef tongue from the pot and let it cool slightly. Rinse it under cold water, then carefully peel off the outer skin. Slice the peeled tongue into bite-sized pieces and arrange them attractively on a serving platter. Serve with lemon slices and soy sauce for dipping.
