This recipe features the secret to perfectly cooked clams and a delicious clam salad, as introduced on tv.Al-Torran. The key is adding clam boiling water to the seasoning sauce for an incredible depth of flavor. I’ve adjusted the quantities slightly for a smaller batch. Main Ingredients
- 1 cup cooked clam meat, shelled
- 1 crisp Korean cucumber (or regular cucumber)
- 1 green chili pepper
- 1/2 green onion (including chopped green onion) or 4 stalks of scallions
Seasoning Ingredients
- 1/4 cup soy sauce
- 1 Tbsp fine chili powder
- 1/4 Tbsp Gochujang (Korean chili paste, adjust to taste)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp clam boiling water
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/4 cup soy sauce
- 1 Tbsp fine chili powder
- 1/4 Tbsp Gochujang (Korean chili paste, adjust to taste)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp clam boiling water
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
If you have pre-cooked clams, carefully remove them from their shells. It’s best to gently separate the clam meat to avoid crushing it.
Step 2
Thinly slice the crisp Korean cucumber (or cucumber) and green onion diagonally. (The Al-Torran recipe uses scallions, feel free to choose based on your preference.) Finely chop the green chili pepper and a bit of the green onion to add a spicy kick.
Step 3
Now, let’s make the flavorful seasoning sauce. In a bowl, combine the soy sauce, fine chili powder, Gochujang, minced garlic, sugar, and the reserved clam boiling water. Mix well. Finally, add the chopped green chili pepper and green onion, and stir again until all ingredients are well incorporated to create the sauce.
Step 4
In a large bowl, add the prepared clam meat, the sliced cucumber, and green onion (or scallions). Add about 3 tablespoons of the prepared sauce first. Gently mix everything together so the sauce evenly coats the clams and vegetables. Taste and add more sauce if needed.
