Step 1
First, prepare the chicken thigh meat by trimming any excess fat. Then, soak the chicken in heavy cream for about 10-20 minutes. If the chicken is very fresh, you don’t need to soak it for too long. The key to a tender texture is to ensure the cream coats the chicken pieces well.

In a large zip-top bag (or a clean plastic bag, which also reduces cleanup!), combine the flour, salt, pepper, and paprika powder. Give it a quick mix. Using a bag is a great way to minimize dishes and ensure the coating ingredients are evenly distributed. For a touch of heat, you can also add a pinch of cayenne pepper.

Gently pat the chicken pieces dry from the cream, then add them one by one into the bag with the flour mixture to coat them.
