Tender and Delicious Beef Jeon

This is a luxurious and incredibly simple-to-make Beef Jeon (Korean savory pancake) that anyone can master. If you prepare fresh, high-quality Korean beef (Hanwoo), you’ll achieve a wonderfully tender and non-chewy Jeon. This recipe is perfect for elevating any meal!
Ingredients
- 400g Korean Beef Round (for Jeon)
- 1/2 cup Sweet Rice Flour
- 4 Eggs
- Pinch of Roasted Salt
- Pinch of Black Pepper Powder
- 1 Korean Green Chili Pepper (for garnish)
- 1 Red Chili Pepper (for garnish)
Cooking Instructions
Step 1
I used fresh Korean beef round, specifically prepared for ‘Jeon’ from the butcher. This cut is tender and ideal for making delicious Jeon.
Step 2
Gently pat the beef dry with paper towels to remove any excess blood. Then, use a meat mallet to lightly pound the beef, especially along the grain, to tenderize it. Be careful not to tear the meat. Season lightly with roasted salt and black pepper and let it rest for a moment.

Spread the sweet rice flour evenly on a large tray. Lightly coat each piece of seasoned beef on both sides with the sweet rice flour. If you don’t have sweet rice flour, all-purpose flour can be used, but sweet rice flour will give you a delightfully chewy texture.
Step 4
Dip each piece of beef, now coated in sweet rice flour, into the beaten eggs, ensuring it’s fully covered. Since the beef is already seasoned, there’s no need to add any salt or pepper to the egg wash.
Step 5
Heat a pan over medium heat and add a generous amount of oil. Once the oil is hot, carefully place the egg-coated beef slices into the pan, one by one.

Beef Jeon is quite thin, so it’s crucial to cook it over medium-low heat to prevent burning and achieve a golden-brown color on both sides. For garnish, finely slice the red and green chili peppers and arrange them attractively on top. The spicy chili garnish cuts through any richness, making the Jeon even more delicious and visually appealing.
