When you buy fresh cod, you’ll often find cod roe and gonads (milt). The gonads are perfect for adding depth to soups and stews, while the cod roe can be seasoned to create a delightful side dish. This recipe will guide you through making a delicious seasoned cod roe that pairs wonderfully with rice.

Step 1
Prepare the fresh cod roe. If you’re not using it immediately, it’s important to wash it thoroughly first. Place the cod roe in clean water and sprinkle evenly with 1 tablespoon of salt. Letting it marinate like this for about 30 minutes will ensure the inside is seasoned and not bland when you eventually cook and eat it, making it even more delicious.
Step 2
Gently rinse the salted cod roe under cool running water. The key is to handle it delicately to prevent the roe from breaking. Thoroughly rinsing off the salt is crucial to enhance the natural flavor of the roe without excess saltiness.
Step 3
Place the cleaned cod roe in a bowl. Now it’s time to season. Add 2 tablespoons of gochugaru and mix gently to coat the roe evenly. Make sure the chili powder adheres well to the roe as you mix.

Once the gochugaru is well mixed, drizzle in 2 tablespoons of sesame oil to add a wonderful aroma and flavor. The nutty scent of sesame oil will complement the roe beautifully. Mix gently again to ensure the seasoning is evenly distributed.

Transfer the seasoned cod roe to an airtight container or cover it with plastic wrap. Refrigerate for 2-3 days to allow it to mature.
