Main Ingredients- Dried Shredded Squid (Jinmichae) 150g

Step 1
First, cut the dried shredded squid (Jinmichae) into bite-sized pieces, about 5-7 cm long. Then, soak them in cold water for about 5 minutes. This prevents them from becoming too hard and helps the sauce to penetrate better. Drain them thoroughly, squeezing out any excess water.

Now, let’s make the delicious sauce. In a bowl, combine 2 Tbsp of gochujang, 1 Tbsp of soy sauce, 2 Tbsp of gochugaru oil, 1 Tbsp of minced garlic, 1 Tbsp of sugar, and 1 Tbsp of oligosaccharide. Mix well until there are no lumps to create the sauce. This is the golden ratio for sweetness and spiciness.
Step 3
Add 3-4 Tbsp of mayonnaise to the drained dried shredded squid and mix them together with your hands until well coated. The mayonnaise will coat the squid, making it extra tender and moist when stir-fried. Marinating it beforehand like this allows the sauce to seep in much better, resulting in a more flavorful dish.
Step 4
Heat a pan and pour in the prepared sauce. Bring it to a simmer over medium-low heat, then immediately turn off the heat. It’s crucial to turn off the heat as soon as the sauce begins to bubble. Add the mayonnaise-coated dried shredded squid to the pan and quickly mix everything together until the sauce is evenly distributed. Your delicious stir-fried dried shredded squid is complete!
